Peas & Carrots Tajine with Basil & Oregano طاجن البازلاء والجزر بالريحان والزعتر



One of the best things to do in the kitchen is take a traditional classic recipe and play with it making a whole new recipe. I love doing that and I always try new things with traditional Egyptian recipes. This time I played with our classic Egyptian peas and carrot tajine,I flavored it with lots of basil and oregano and the result was great! :)

Chicken & Spinach Thai White Curry كاري الدجاج والسبانخ الأبيض على الطريقة التايلاندية


I always loved those Indian curries full of spices and all rich in flavors, but when I visited Thailand I was introduced to Thai curries, much lighter in flavor and with way less spices. Thai curries has this freshness about them that I can't really explain and one of my favourite curries that I had there was White Curry...a new curry that you must try and this is simple my interpretation of it :)

Chicken Sharkaseya شركسية الدجاج



Some of the recipes of Egyptian cuisine has been influenced by Turkish cuisine. This influence is due to the Turkish origin of some of Egypt royals. 

Sharkaseya is a very famous Egyptian recipe that showcases this influence. Some claim it's originally Turkish, some claim it's purely Egyptian...all I'm sure of is that it is an amazingly delicious dish,Turkish or Egyptian ;-)
